Apart from traditional Mexican cuisines, you can also try some other Mexican dishes, which are mainly prepared in canola oil.
Mixed Greens, Mango and Pecan Salad
For dressing the salad you have to take 1/2 cup of orange juice, 2 tbsp lime juice, 1 tbsp white vinegar and 1/3 cup of canola oil in a bowl. Add 1 tbsp honey, 1 tbsp tequila, 1/2 tsp salt and 1/4 tsp pepper in this liquid mixture and mix them together. Keep it in the refrigerator to use later.
Take another bowl and toss together eight cups of greens, two oranges, a medium sized diced mango, one thinly sliced onion and 1/3 cup of fresh cilantro.
Now drizzle the dressing as much you wish on salad. Garnish it with pecans and lime zest before serving.
Gazpacho with Multi-Grain Croutons
Blend tomato juice, canola oil, hot sauce, chopped tomatoes, cucumber, red pepper, green pepper, onion, carrot and garlic in a food processor until it becomes smooth. Season the mixture with salt and pepper and refrigerate for at least two hours. Garnish the soup with fresh cilantro and croutons and serve.
To prepare croutons, you have to preheat oven to 350F (180C). Then toss multi-grain bread with canola oil, Parmesan cheese, salt and pepper. Place it on baking sheet and bake for 20 minutes until it becomes crisp.
Fruit Salad with Mojito Dressing
For preparing fruit salad peel mango, papaya and pine apple and cut them into bite-size pieces. Take a small cantaloupe and cut it into balls or bite-size pieces. Prepare all the fruits into a serving bowl and toss them lightly. Peel and slice medium size bananas and keep them aside.
For dressing, combine canola oil, club soda, lime juice, lime zest, white rum, fresh mint leaves and granulated sugar in a container. Before you serve fruit salad, add already sliced bananas. Then pour dressing gently over it and serve immediately.
