Baked Empanadas with Beef Filling
For making empanadas, you have to prepare dough of flour with warm water or milk. Add baking powder, canola oil and salt in the flour. Knead it properly for few seconds and wrap it in plastic for 30 minutes.

Heat canola oil in a sauce pan and saute onions and garlic until they turn soft. Add ground beef and cook it thoroughly till it becomes brownish. Add pepper, salt, cumin, oregano, tomato paste, currants and black olives into it. Add beef broth and simmer it for 20-25 minutes till liquid evaporates. Then add hard boiled eggs and potatoes and season.

Take set the dough as a log and cut it into equal portions. Place them on lightly floured surface and roll them with a rolling pin to make 1/4 inch thick circles with 4 inch diameter. If you make these discs earlier then keep them between wax paper so that they do not turn hard.

To fill empanadas, brush half edge of the disc with egg white mixture of 1 egg white and 1 Tbsp water. Put one full tablespoon of beef filling in the centre of the disc and fold half the circle over to form a half-moon. Remember to press the edges firmly. Now place the empanadas on lightly greased baking sheet and brush tops with egg white mixture. Then pierce the tops gently with fork and put them to bake at 350 F (180C) for about 20 minutes or until lightly browned.

Grilled Mexican Chicken Pizza:
Mix lime juice, canola oil, minced garlic, chili powder and salt and pepper together in large bowl. Cut chicken breasts into 1/2 inch (2 cm) pieces and toss them with oil mixture. Then marinate mixture, and refrigerate for 2 to 4 hours.

Take a large convex bottomed pan and stir fry chicken mixture over medium high heat. Cook until chicken pieces are thoroughly cooked and juices run clear.

Preheat oven to 400 F (200 C). Now arrange tortillas on rimmed, foil lined baking sheets. Sprinkle some cheese over tortillas and bake for about 6 minutes until they turn golden brown.

In the meantime, combine chicken, green pepper, red onion salsa and parsley together and mix them well. Now spread this mixture evenly onto warm tortillas again put them to bake for 5 minutes. Garnish them with lettuce, tomatoes and a dollop of sour cream before serving.

Lentil Burritos
Take split red lentils, rinse and drain them. Put them to boil; cover and simmer for 20 minutes. Drain the excess water. Put canola oil in a frying pan and saute diced onion, green pepper and minced garlic. Add chilly powder, ground cumin, cooked lentils, tomato paste and water. Stir for two minutes until it begins to thicken. Cook for another five minutes.

Put down the tortillas flat and place some lentil mix down the center and roll up up to make it a burrito. Now it is up to you to top each burrito with dollop of sour cream, salsa and light sprinkle of cheddar cheese.
