Vegetarian Recipes for Passover day



Passover day reminds about the arrival of spring season, known for its green vegetables. It is thus the perfect time to try some new vegetarian recipes to welcome the start of spring and celebrate the Passover day.

Roasted broccolini with tomatoes, garlic and lemon
First of all arrange lemon slices in the bottom of a foil pan and top it with tomatoes. Now spray evenly with Pam or olive oil. Place trimmed broccolini, fresh thyme leaves and minced garlic in a bow and spray with oil. Thereafter, put the broccolini preparation carefully on the top of tomatoes and cover the pan tightly with a heavy-duty foil. Bake the preparation for about 20 minutes in an oven at 375 degree. Once it is done, uncover the dish and sprinkle salt and pepper to season it.

Vegetable cake
Heat olive oil in a pan and saute minced peppers and finely chopped leeks till they become soft. Put these fried spices in a bowl and add grated carrots, nicely chopped spinach, boiled and mashed potatoes. Then add the properly beaten eggs in the mixture and mix them together gently. Make cakes or patties with the mixture. You can bake these cakes in preheated 350 degree oven after placing them on a parchment lined baking sheet. Bake it for ten minutes on both the sides until it turns brown and crispy.
